Left Over Christmas Turkey Recipes
Crunchy Turkey Salad
2 cups cooked turkey
2 cups shredded cabbage
1/2 cup diced celery
1/4 cup sweet pickle relish
1/4 cup salad dressing or mayonnaise
Combine and serve on lettuce
garnished with eggs or wedged
tomatoes.
Leftover Anything Stew
Cut up leftover meat (roast, chicken, or
turkey). Add cut up potatoes, peas, and
carrots, and salt and pepper. Add a can
of chicken noodle or mushroom soup
and heat up. Thicken with flour.
Dumplings may be added if you wish. An
easy meal in a hurry.
Turkey Pie Recipe
2 cans cream of chicken soup
1 1/2 cup frozen peas
2 cups cooked turkey
Pepper to taste
Top with tea biscuit crust. Prick top
with fork.
Cook at 425F for 25-30 minutes.
Cheese Turkey Cups
2 tbsp. butter
1/3 cup flour
1 cup cream
1 cup grated parmesan cheese
3 cups left over turkey
1/2 cup peas, canned
Salt and Pepper
Pastry Shells
Make white sauce by mixing
butter and flour. Add cream. Add
the rest of the ingredients and
heat. Spoon into baked pastry
shells.
Turkey Casserole Recipe
1/4 cup onion (chopped)
Margarine
1/2 cup Miracle Whip salad dressing
1 cup chopped cooked turkey
1/4 cup green pepper (chopped)
1 (10oz) can cream of mushroom soup
2 cups (4oz) noodles, cooked, drained
1 cup soft bread crumbs or crushed
Ritz crackers
Cook onion and green pepper in
margarine until tender. Blend in soup
and salad dressing. Add noodles and
turkey; mix lightly. Pour into 1 1/2 quart
buttered casserole dish. Top with bread
crumbs tossed with 2 tablespoons
melted margarine. Bake at 350F for 30
minutes.
"Left Over" Turkey In Buns Recipe
4 toasted hamburger buns
1 cup chopped cooked turkey
1 tbsp. instant minced onion
1 tsp. parsley flakes
1/4 cup chopped salted peanuts, optional
1 egg, hard cooked and chopped
1/2 cup mayonnaise
1/3 cup shredded sharp cheddar cheese
Salt, pepper
Place bottom halves of buns on paper towel
lined plate. Combine remaining ingredients.
Season with salt and pepper, as desired.
Spread filling on buns. Add bun tops to
make four "Bunwiches." Heat in microwave
on full power for 2-3 minutes, or until
heated through. Yield: 4 servings.
Turkey Loaf Recipe
1 1/2 cups soft bread crumbs
3/4 cup scalded milk
2 tbsp. melted butter
2 cups finely chopped cooked turkey
1 small onion, minced
1/2 cup finely chopped celery
1 tsp. parsley
1 tsp. salt
Dash pepper
2 eggs, beaten
Combine all ingredients, mix well.
Spoon into greased loaf pan. Set in
shallow pan of water. Bake at 350F for
one hour. Serve with cranberry or
variety of sauces.
Turkey Crepes Recipe
1 egg
1 tbsp. butter, melted
1 cup milk
1 cup flour
Beat egg to blend. Add the first cup
of milk, melted butter, and flour. Beat
until smooth. Lightly grease a small
skillet and heat. Pour 2 tbsp. batter
into skillet, quickly lift pan and tilt
from side to side till batter covers
bottom. Return to heat, brown
crepes on one side only. Repeat with
remaining batter.
1 cup diced cooked turkey
1 can (10oz) cream of chicken soup
1/4 cup grated parmesan cheese
1/4 tsp. salt
1/3 cup toasted slivered almonds
1/2 cup cooked or canned spinach,
well drained
1/4 cup finely crushed crackers (6-7)
1/4 cup chopped onion
1 cup milk
Combine turkey, spinach, half of
soup and milk, crumbs, cheese,
onion, and salt. Spoon a heaping
tablespoon filling on unbrowned side
of each crepe; roll up. Arrange seam
side down, in shallow baking dish.
Combine remaining soup with the
remaining milk; pour over crepes.
Sprinkle with almonds. Bake 350F
for 30 minutes.
Macaroni Magic
10 1/2 oz condensed cream of
mushroom soup
1/2 cup milk
1/2 cup diced cooked turkey
1/4 cup finely chopped onion
1 cup shredded cheddar cheese
2 cups cooked macaroni
2 tbsp butter
In a buttered 1 1/2 quart casserole
blend soup, milk, turkey, onion, 1/2
cup cheese and macaroni. Sprinkle
remaining cheese and butter on top.
Bake in 400F oven for 20 minutes or
until browned and bubbling.
